A piece of California roll contains around 40 calories and only 4.5g fat.

One piece of tuna nigiri contains around 42 calories and only trace fat.

Rice is an excellent source of carbohydrate and protein, it is gluten-free so suitable for those with wheat allergies.

Rice vinegar has amazing antibacterial properties, which have long been used to preserve food.

It gently aids digestion while also lowering the risk of high blood pressure.

Ginger is also an effective natural antiseptic. It aids digestion as well as boosting the immune system and helps the body to fight colds and flu.

Seaweed may be considered an unusual food by some, but it is highly nutritious. It contains protein, minerals – especially iodine – and is rich in vitamin A, B1, B2, B6, niacin and C. it helps prevent cholesterol deposits from building up in the blood vessels. The darker the nori, the higher the quality.

Soy sauce This is made from fermented soybeans, which are high in protein, magnesium, potassium and iron.

Wasabi Rich in vitamin C, wasabi stimulates the production of saliva and aids digestion. It has powerful anti-bacteria properties and is mildly antiseptic.

Sushi: refers to a broad range of food prepared with special sushi rice and vinegar. Lots of fillings and topping are used such as vegetables, chicken and fish. People sometimes mistakenly think all sushi is raw fish; raw fish is one type of Japanese cuisine called sashimi.

Sashimi: Raw/smoked/seared/marinated fish.

Maki Rolls: Seasoned rice and fillings rolled in a sheet of nori.

Nori: Dried sheet of seaweed paper used for wrapping different types of sushi.

California Roll: Maki roll of avocado and crabsticks coated in sesame seeds.

Wasabi: Very hot green Japanese condiment, similar to horseradish.

Temaki Sushi: Like a maki roll but rolled into a cone shape also known as a hand roll.

Soy Sauce: Dark rich sauce made from soy beans and wheat.

Nigiri Sushi: a mound of rice with a thin layer of topping draped across the top, usually vegetables, fish or Japanese tamago omelette.

Gunkan Sushi: A mound of rice wrapped in nori and filled with a filling – looks like a boat.

Gari: special pickled Japanese ginger used to cleanse the palate.

Miso Soup: Traditional Japanese soy bean soup served with Tofu and spring onions.
